A colleague recently came back from a trip to Bulgaria and told us how delicious a traditional pastry there is. This pastry is called banitsa, which is traditionally made with cheese, but you can try it with other ingredients as well. She was so excited that we all wanted to try the recipe together. For this you need:
- 200 ml yoghurt
- 1/2 tsp baking soda
- 4 eggs
- 400 g handmade dough sheets/crusts for banitsa
- 125 g melted cow butter
- 200 g crumbled feta cheese
- 50 g dried porcini mushrooms
- egg for brushing
That is how it goes:
- First, put the yogurt and baking soda in a bowl and mix well.
- Then, in another bowl, beat the eggs and then add the yoghurt. Stir everything well until the mixture becomes homogeneous.
- Then place the pastry sheets on the table and brush them with the melted cow butter.
- Then brush them with the egg mixture as well and put some of the crumbled feta cheese and porcini mushrooms on top.
- Then roll up the pastry sheets.
- Select the bread program and bake at 160 degrees for 25 minutes.
- After 12 minutes, turn the banitsa over.
- If desired, you can serve the banitsa with yogurt.
