- Butter – 50g
- yellow onion – 1, chopped
- Flour – 40 g
- Milk – 480 ml
- Vegetable broth – 480 ml
- Broccoli – 500g
- carrots – 1
- black pepper – 1/2 tsp
- Garlic Powder – 1 tsp
- grated cheddar – 200 g
To serve (per serving):
- fresh bread – 1
- carrot – 1
To Make the Broccoli Cheddar Soup:
- Melt the butter in a pan.
- Add the chopped yellow onion and flour and stir well. Fry for a few minutes.
- Bring the milk and vegetable broth to a boil.
- Add the broccoli florets, carrot and spices.
- Cook covered for 10-15 minutes.
- Add the shredded cheddar and stir.
- Remove the pot from the stove and serve the soup in the fresh bread.
- Garnish with carrot.
